 zpinkflower Making some "Arroz con Pollo".  In other wise, I'm making Rice with Chicken.  It's a Mexican dish.  A simple one but very popular and delicious.  I guess it takes after the Spanish dish "Paella".  Here's the recipe for "Arroz con Pollo":

1 Tablespoon Olive Oil, or any other cooking oil
2 cups white long grain rice
1-2 cloves of garlic, garlic
1/4 cup chopped onion
1-2 tomatoes, crushed
4 cups water
1 Tablespoon Chicken Boullion
Chicken, a couple of breast, cut up.
2-3 carrots, sliced
1/2 cup peas, optional
1/2 cup of squash, optional
any vegies you like

Pour 1 Tablespoon Olive Oil in a cooking pan.
Pour white rice and garlic and brown very lightly.  You actually just need some of the white rice to turn a bit more white.
Add onion and cook a bit more.  Make sure you are stirring so the rice does not brown too much.
Add tomatoe and heat up.
Add the 4 cups of water and 1 Tablespoon of Chicken Boullion.
Add chicken and vegetables.
Let it boil lightly.
Run heat down and simmrer for 20 minutes.  Do not open the pan.
Turn off the stove.  Let it rest for 5 minutes. 
Enjoy.

I've just this week discovered Heinz Chunky Soups. Awesome ! $5 for 2 at Coles. I can recommend the pea and ham and butter chicken curry, but they all look good.

lol I had those soups all week for lunch at work.

peppered steak was nice though the chicken corn was a bit bland.
